- butter - use room temperature unsalted butter to make a fluffier cookie.
- brown sugar - I recommend using a light brown sugar
- granulated sugar
- eggs - for best results, allow eggs to come to room temperature before preparing the recipe.
- vanilla extract
- all-purpose flour
- baking powder
- salt
- chocolate chips - I recommend using semi-sweet chocolate chips, however, you can use milk chocolate, dark chocolate, or white chocolate instead.
- Cadbury Mini Eggs - For best results, roughly chop the mini eggs into halves or quarters. If you don't want to use mini eggs, you can use other chocolate Easter candy.

You will also need a hand/stand mixer, mixing bowls, baking sheet, parchment paper, cookie scoop, and a Ziploc bag.

Use a hand mixer or stand mixer and a mixing bowl to combine the ingredients to make the cookie dough. Once mixed, the dough should be quite soft and light in color. If it seems too sticky, you can add a little bit of flour to the mixture.
When prepping the Mini Eggs, aim for halves and quarters rather than a fine dust. The larger chunks provide that satisfying crunch and prevent the dough from turning gray/blue from the candy shells. Carefully fold chopped mini eggs into the dough. To keep the cookies from spreading too much while baking, I would recommend chilling the dough for 30 minutes first.


Bake the cookies until the edges are a lightly golden. For a chewy cookie, do NOT overbake! Let the cookies cool on the baking sheet for 3-5 minutes, and then move the cookies to a wire rack to finish cooling.

Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2/3 cup light brown sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 3 cups all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 2 cup Cadbury mini eggs, roughly chopped
- 1 cup semi-sweet chocolate chips
Directions:
- Preheat the oven to 350º F.
- Line a baking sheet with a silicone baking mat or parchment paper and set aside.
- In a large mixing bowl, beat together butter and sugars
- Add egg and vanilla extract, and stir until just combined.
- In a separate mixing bowl, whisk together flour, salt, and baking soda.
- Add the dry ingredients into the wet and mix until combined and a crumbly dough begins to form.
- Fold in the chopped Cadbury eggs and chocolate chips until just combined.
- Use a cookie scoop to add balls of dough to the lined baking sheet, spaced about 1-2 inches apart.
- Press additional mini eggs pieces onto the tops of the cookies.
- Bake cookies for 9-11 minutes until edges are golden brown. Do not over-bake.
- Allow the cookies to cool on the baking sheet for 3-5 minutes.
- Transfer the cookies to a wire rack to cool completely.

- Store cookies in an airtight container for up to a week.
- Freeze cookies for up to 3 months in an airtight container.
- Chill the dough for 30 minutes before baking to prevent the cookies from spreading too much.
