Do you like Piña Coladas? Getting caught in the rain?
...ahem... sorry. Couldn't help myself.

My brother thought of this fantastic idea to get together for a family dinner once a month - but to make it interesting, he put a mix of random ingredients and menu components {appetizer, main dish, sides, dessert, etc} in a hat and we all picked one of each. We had to make something with the ingredient for whatever menu component we were given and then bring them all together to make a meal!
My picks were "salad" and "coconut". Seems simple enough...
I am not really a fan of coconut, but I do love Piña Coladas!! So, why not make a salad version of it?
Piña Colada Salad
32 oz Vanilla Yogurt
2 cups Sweetened Flaked Coconut
1/2 cup Coconut Milk
2 cans Chunk Pineapple
3 Bananas (peeled and sliced)
Mix the yogurt, coconut, and coconut milk in a large bowl. Stir in the drained pineapple and banana.
Serve cold.
This sounds amazing! :)
