Elf on the Shelf Christmas Pancakes

The kids will "flip" for joy when they see these Elf on the Shelf Christmas Pancakes that look just like your favorite scout elf!

Make your Christmas morning a little more magical with a batch of Elf on the Shelf pancakes! In just 30 minutes, you can transform a simple stack of pancakes into everyone’s favorite scout elf using fresh strawberries, fluffy whipped cream, pillowy marshmallows, and sweet chocolate chips. It’s a breakfast so cute, it might just report back to Santa that you’ve been extra good this year.

Prepare the elf decoration ingredients and set them aside. Combine the pancake ingredients in a mixing bowl, and cook the pancakes following the recipe directions below.

Decorate an Elf on the Shelf Christmas Pancake:

You can decorate the elf's face yourself, or let the kids do it. There are lots of ingredient options to get a complete the look to suit everyone's tastes. Here are some suggestions:

  • Hat: strawberries, raspberries, cherries, or cranberries.
  • Hat Band: whipped cream, coconut flakes, white chocolate chips, or mini marshmallows.
  • Hair: Nutella, melted chocolate chips, or peanut butter.
  • Collar: marshmallows, banana, whipped cream, coconut, or mini marshmallows.
  • Eyes: chocolate chips, blueberries, or M&Ms.
  • Cheeks: banana, marshmallows

You will also need a griddle or skillet, mixing bowls, and a piping bag.

Place the pancake in the center of the plate. First, create the hat: arrange the slices of 2-3 strawberries at the top of the pancake into a triangle shape.

Add hair by scooping Nutella into a piping bag or a Ziploc bag with the corner cut off. Pipe lines of Nutella along the top of the pancake to create the elf's hairline.

Next, add dollops of whipped cream along to top edge of the pancake, in between the hair and hat to create the hat band. Add two small dollops on top of the pancake for the eyes.

To make the dollops more even in size, pour whipped cream into a piping bag or a Ziploc bag with the corner cut off.

Top each hat band whipped cream dollop with a mini marshmallow. Add a chocolate chip to the center of each whipped cream dollop for the eyes. For the mouth, cut a small piece of strawberry in a semi-circle shape and place it in the center of the pancake, below the eyes.

Add a banana slice on each side of the mouth for the cheeks. To make them pink, rub a strawberry over the banana slice! Cut a large marshmallow into triangles, then arrange them at the bottom of the pancake to create the collar.

Pancake Ingredients:

  • 1 cup all-purpose flour
  • 1 Tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup milk
  • 1 egg
  • 1 Tablespoon melted butter
  • Cooking spray

Decorating Ingredients:

  • 2 cups whipped cream
  • Hat: 8-12 fresh strawberries, sliced
  • Hair: 1 cup hazelnut spread
  • Hat Trim: 1 cup miniature marshmallows
  • Eyes: 8 chocolate chips
  • Cheeks: 8 banana slices
  • Collar: 4 large marshmallows

Pancake Directions:

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Set aside.
  2. In a separate bowl, whisk together milk, egg, and melted butter
  3. Add wet ingredients to dry ingredients and stir until just combined.
  4. Heat a griddle or skillet over medium heat and coat with cooking spray.
  5. Pour ¼ cup of batter onto the skillet. Cook about 2-3 minutes, until bubbles appear on the surface.
  6. Flip pancake and cook for 1-2 minutes or until golden brown.
  7. Repeat with remaining batter.
  8. Decorate and serve immediately or let pancakes rest on a wire rack to remain crisp.

Decorating Directions:

  1. Place a pancake (or a small stack) in the center of a plate.
  2. Arrange the slices of 2-3 strawberries at the top of the pancake into a triangle shape.
  3. Add Nutella to a piping bag or a Ziploc bag with the corner cut off. Pipe one smaller and one larger "swoop" line of Nutella along the top of the pancake to create the elf's hairline. Go over the lines a few times to create a hair-like look.
  4. Pour whipped cream into a piping bag or a Ziploc bag with the corner cut off.
  5. Pipe dollops of whipped cream in a line along to top edge of the pancake, in between the hair and hat to create the hat band.
  6. Pipe two small dollops of whipped cream on top of the pancake for the eyes.
  7. Add a mini marshmallow to the top of each dollop on the hat band.
  8. Add a chocolate chip to the top of each dollop for the eyes.
  9. Cut a small semi-circle of strawberry and place it below the eyes for the mouth.
  10. Add a banana slice on each side of the mouth for the cheeks.
    *Rub a strawberry over each banana slice to give them a pink tint.
  11. Cut a large marshmallow into 3-4 triangles. Arrange the marshmallows at the bottom of the pancake, with the points facing downward to create the collar.
