Using a cake mix is one of my favorite ways to save time in the kitchen. The main ingredients are included in one simple package, which makes it quick to throw a batch of cookies together. These Strawberry Cake Mix cookies have a nice, chewy texture and are bursting with strawberry flavor! We enjoy these cookies any time of year, but the vibrant color makes them the perfect treat for Valentine’s Day, Mother’s Day, birthdays, and gender reveal parties!

To make a batch of these delightful Strawberry Cake Mix Cookies, you will need a few simple ingredients: cake mixstrawberry Jell-o, butter, cream cheese, and white chocolate. You will also need a hand mixer or stand mixermixing bowl, and measuring cups and spoons.

Use a hand mixer or stand mixer to combine cookie dough ingredients in a mixing bowl. Once mixed, the dough should be quite soft and red in color.

Use a cookie scoop to add balls of dough onto a baking sheet lined with a silicone baking mat. For soft and chewy cookies, be careful not to over-bake. Move cookies to a wire rack to cool completely.

While the cookies are cooling, melt white chocolate chips in the microwave. Carefully drizzle chocolate over each of the cookies in a zig-zag motion. If you don't want to use a piping bag, you can use a sandwich bag with the tip cut off, or a spoon to drizzle instead.

Directions:

  1. Preheat oven to 325º F.
  2. Line 2 baking sheets with silicone baking mats and set aside.
  3. In a large mixing bowl, add cake mix, strawberry Jell-o mix, butter, cream cheese, and egg.
  4. Use a hand-mixer on medium speed to mix combined.
  5. Use a cookie scoop to place balls of dough on a baking sheet 1 inch apart.
  6. Gently press the dough balls to about 1⁄2 inch thick.
  7. Bake for 12-14 minutes, or until golden brown.
  8. Remove the cookies from the oven and allow them to cool for at least 30 minutes on a wire rack.
  9. Melt white chocolate chips in the microwave. To prevent scorching, melt the chocolate for 30 seconds at a time, stirring in between each burst until the chocolate is completely melted.
  10. Drizzle melted white chocolate over each of the cookies using a piping bag or sandwich bag with the tip cut off.

Tips: 

  • Instead of a white chocolate drizzle, fold the white chocolate chips directly into the batter.
  • Storage: Store cookies in an airtight container for up to one week.
  • Freeze: Freeze cookies for up to 1 month. Stack cookies in an airtight container with a piece of parchment paper placed between each layer to prevent the icing from sticking to the other cookies.
  • For perfect circle cookies: Right after removing cookies from the oven, place a mason jar lid ring, cookie cutter, or large glass over a cookie. Gently move in a circular pattern around the cookie, allowing it to reshape the cookie into a circle. This only works when cookies are still soft and fresh out of the oven!
