Piña Colada Salad

Do you like Piña Coladas (and getting caught in the rain)? If so, you'll love this refreshing Piña Colada Salad!

My brother thought of this creative dinner party idea for when my family gets together. He started by writing random ingredients and menu components (appetizer, main dish, sides, dessert, etc) on strips of paper. Everyone coming to the dinner chooses one strip each paper. Then you make that menu component using the chosen ingredient. When everyone comes to the party, the creative dishes are then combined to make an entire meal! My picks for the first party were "coconut" and "salad", which inspired me to make this delectable Piña Colada Salad to bring to our dinner party.


Piña Colada Salad

This salad is so incredibly easy to make, and only requires a few simple ingredients: vanilla yogurt, flaked coconut, coconut milk, chunk pineapple, and bananas.

Combine all of the ingredients in a large bowl to create a refreshing salad that makes you think of a tropical vacation, relaxing on the beach! This salad was such a hit at our dinner party, and it has become one of my family's favorite summer salads.

Serves 6-8

Ingredients:

  • 32 oz Vanilla Yogurt
  • 2 cups Sweetened Flaked Coconut
  • 1/2 cup Coconut Milk
  • 2 cans Chunk Pineapple
  • 3 Bananas (peeled and sliced)

Directions:

  1. Mix the yogurt, coconut, and coconut milk in a large bowl and stir until combined. 
  2. Next, stir in the drained pineapple and banana and combine.
  3. Serve cold and store in an airtight container.
