My family loves teriyaki chicken, and we go out to dinner pretty often to get some. To save some money and time during busy weeknights, I make this Slow Cooker Teriyaki Chicken instead. It's so easy and only takes about 10 minutes of prep time (at the most). Pretty much all you have to do is stir everything together and pour it into the slow cooker, and then let the appliance do the rest of the work for you! This recipe has become a family favorite, and I'd dare say that it's better than takeout!!

I'm always looking for different ways to serve chicken for dinner, and this recipe is the perfect mix of my Chicken & Rice and Cream Cheese Chicken recipes. It's got the creaminess from the cream cheese, and the zesty flavor from Italian seasoning that really makes this meal one of our favorites. Even better, you can easily make this in the slow cooker with minimal effort!!

Ingredients:
7-8 chicken tenderloins or 4 chicken breasts (frozen or thawed)
1 can cream of chicken soup
1 packet Italian Dressing Mix
1 cup milk
8 oz cream cheese
1 tsp seasoning salt

Directions:
  1. Place chicken in slow cooker.
  2. In a bowl, mix together cream of chicken soup, Italian dressing mix, milk, seasoning salt, and cream cheese. Pour mixture over the chicken.
  3. Cook on low for 6-8 hours, then cut chicken into small pieces or shred the chicken.
  4. Serve over egg noodles or rice.
**This can also be cooked on the stove top. Cut chicken into pieces, then cook thoroughly. Mix together cream of chicken soup, Italian dressing mix, milk, seasoning salt, and cream cheese. Pour mixture over the chicken and stir over medium heat until heated through. Serve over egg noodles or rice.

The hotter it gets outside, the harder it is for me to want to turn on the oven and heat up the house even more. I do a lot of slow cooker meals in the summer for this reason. This meal is really simple, and pretty much fool-proof. All you need to do is prepare the rice, potatoes, or pasta (and any sides) when it's time to eat!

Slow Cooker Beef Tips

Ingredients:
1.5 - 2 lbs beef stew meat
1 can cream of mushroom soup
1 packet brown gravy mix
1 packet dry onion soup mix
1 cup water

Directions:
  1. Add meat to slow cooker.
  2. Mix cream of mushroom soup, gravy packet, dry onion soup mix, and water in a bowl until combined. Pour into slow cooker over meat.
  3. Cook on low for 4-6 hours. For best results, do not lift the lid at all during cook time.
  4. Serve over rice, mashed potatoes, or egg noodles.

What could be better than a big, delicious Thanksgiving dinner with family? How about a virtual Thanksgiving dinner with some awesome bloggers? I'm thrilled to be a part of this, and I'm sure you'll find a lot of fantastic recipes to help you out this Thanksgiving!

Besides the turkey, one of my favorite Thanksgiving dishes is mashed potatoes. Light, fluffy, and covered in butter and/or gravy... unless you're on a diet, how can you say no? A great thing about this recipe is that it's all made in the slow cooker, not to mention having free stove and oven space to get the rest of your meal put together, plus less dishes to wash. That's really what matters when you're the cook, right?

Slow Cooker Mashed Potatoes
recipe adapted from Pillsbury
Ingredients:
  • 5 lbs potatoes, peeled* and cut into 1 inch chunks {I used Russet potatoes}
    *Peeling is optional. I didn't peel mine, and they turned out great.
  • 1 1/2 cups chicken broth
  • 1/2 cup butter, cut into chunks
  • 1 cup sour cream
  • 1-2 teaspoons salt {to taste}
  • 1-2 teaspoons garlic salt or powder {to taste}
  • 1/4 teaspoon pepper
  • 1/2 - 1 cup milk, warmed
Instructions:
  1. Place potatoes, chicken broth and butter in a 4-5 quart slow cooker.
  2. Cover and cook on High setting for 4 - 4 1/2 hours or until potatoes are tender. You can also cook on Low setting for 8 hours.
  3. Mash potatoes and add in remaining ingredients except the milk. You can use a hand masher, or I used an electric hand mixer to combine all ingredients. Do not overmix, or your potatoes will become gluey.
  4. Slowly stir in milk until desired consistency.
  5. Cover and keep at low or warm for up to two hours. You may need to add in a little more milk if you wait to serve it so they don't dry out.

This recipe is a popular one at our house. It's easy & quick, and you can also easily adjust the recipe to feed more or less. Plus, since you can add whatever toppings {or not!} you want, everyone is happy!

Sauce Recipe:
6-7 Chicken Tenderloins {whatever you have}
1 can Cream of Chicken Soup
1/2 cup Milk

Optional:
1/2 teaspoon Seasoning Salt {to taste}
1/4 teaspoon Garlic Salt {to taste}

Put soup and milk in Crock Pot and mix well. Add in chicken and add salts. Cook on Low for 2-4 hours. Stir sauce and cut chicken up into small, bite-size pieces*. Chicken should be tender enough to cut up with a spoon. If not, you can shred it with two forks.

Cook time is perfect between 4-6 hours on Low. You can cook it on High for 2-4 hours.

*Chicken can be pre-cut if you prefer to do that before adding to Crock Pot. I usually just cut up the chicken in the Crock Pot after a few hours and let it keep cooking. I have also put the chicken in frozen before, and the cook time seems to be about the same.

Spoon sauce over cooked rice and serve plain or add toppings.

Peas
Green Onions
Cheese
