If you like red velvet cake, you are going to LOVE these Red Velvet Cake Mix Cookies! With only 4 ingredients, these are some of the easiest cookies to make, and are the perfect treat for everyday sweet tooth cravings or too share on special occasions, like Valentine's Day!

To make these Red Velvet Cake Mix Cookies, you will need FOUR simple ingredients: red velvet cake mix, oil, eggs, and white chocolate chips. You will also need a mixing bowl and a baking sheet lined with a silicone mat or parchment paper.

Combine all of the cookie dough ingredients in a mixing bowl using a hand mixer or stand mixer. Once the dough starts to thicken, you can use a cake spatula to fold all of the ingredients together until fully combined.

Use a medium cookie scoop to add cookie dough balls onto a baking sheet lined with a silicone baking mat or parchment paper. Bake the cookies for 10-12 minutes. For a soft and chewy cookie, do not over-bake. Let the cookies cool on the pan for 5 minutes, and then transfer to a wire rack to cool completely.

  1. Preheat the oven to 350º F.
  2. Line a baking sheet with a silicone baking mat or parchment paper and set aside.
  3. In a large mixing bowl, stir together cake mix, eggs, and oil until well combined.
  4. Fold in the white chocolate chips.
  5. Use a medium cookie scoop to add balls of dough to the lined baking sheet, about 1 inch apart.
  6. Bake cookies for 10-12 minutes. Do not over-bake.
  7. Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes.
  8. Transfer the cookies to a wire rack to cool completely.

Storage: 

  • Cookie dough can be made ahead and kept covered in the refrigerator for up to 2 days. The dough will begin to dry out if stored for longer.
  • Cookies can be stored for up to a week in an airtight container at room temperature.
  • Freeze cookies for up to 3 months in an airtight container.
