As much as I try to diet and eat right, my biggest food weakness has got to be ice cream. Working on getting back in shape is on everyone's mind now that summer is on the way. Unfortunately, ice cream is also a great way to cool down in the heat...

These ice cream pies I'm about to share with you have become one of my favorite desserts for two main reasons. First, they are a delightful treat that I have enjoyed devouring, and I think you will too. Second, and most importantly, they are made with low carb ice creams. I like using this for dessert because it's a high-protein and low fat ice cream that combines delicious taste, powerful nutrition, and clean ingredients so you don't have to feel guilty about enjoying dessert!

The 4-Ingredient Vanilla Bean Ice Cream Pie with a graham cracker crust is filled with a rich and sweet vanilla bean ice cream. Fancy up the pie with some whipped cream and your favorite fresh fruit for a refreshing dessert that's delicious, guiltless, low fat, and low in carbs!

4-Ingredient Vanilla Bean Ice Cream Pie
Makes one 5-inch pie

Ingredients:
Vanilla Bean Ice Cream
3/4 cup graham cracker crumbs
3 Tbs unsalted butter, melted
8 teaspoons sugar
Toppings: strawberries (sliced), whipped cream

Directions:
  1. In a bowl, combine graham cracker crumbs, sugar and butter. Stir until completely combined - will have a wet sand-like consistency.
  2. Press the mixture into the bottom of the pie dish and slightly up the sides. Make sure it is tight and compact, using the bottom of a flat measuring cup or your fingers. The crust will be thick.
  3. Let sit in the freezer or refrigerator to set.
  4. Get the ice cream out and let it soften a little. Pour it into the prepared pie crust and smooth with a spatula or a spoon.
  5. Top with a dollop of whipped cream and a sliced strawberry!

3-Ingredient Mint Chip Ice Cream Pie
Makes one 5-inch pie

Ingredients:
8-10 chocolate sandwich cookies, finely crushed
1/8 cup chocolate Magic Shell topping
Toppings: chocolate sandwich cookies (halved), whipped cream

Directions:
  1. Pour crushed cookie crumbs into a bowl and add the Magic Shell topping. Stir until completely combined - will have a wet sand-like consistency.
