S'mores Cookies

Combine classic s'more ingredients with cookie dough to create ooey gooey S'mores Cookies!

S'mores is a popular summer dessert. It's also a treat that can be enjoyed in practically any form! For instance, these S'mores Cookies has everything a good s'more needs paired with a classic chocolate chip cookie. Making s'mores this way is convenient for parties, family living room "camping", or just to make yourself a late night treat. They come out perfectly gooey, just like when you make one while sitting around the campfire.

To make these S'mores Cookies, you will need these ingredients:

  • butter - I use unsalted, but you can use salted if you'd like.
  • brown sugar - you can use light or dark brown sugar.
  • granulated sugar
  • eggs - for best results, allow eggs to come to room temperature before preparing the recipe.
  • vanilla extract
  • all-purpose flour
  • baking powder
  • salt - omit salt if using salted butter
  • chocolate chips - you can use semi-sweet, milk, dark, or even white chocolate chips
  • mini marshmallows - all s'mores need marshmallows, and these will also add a chewy texture to the cookies.
  • Snack Size Hershey's chocolate bars - any brand of chocolate bar will work, but I like the classic taste of Hershey's and the way that it melts

You will also need a hand/stand mixer, mixing bowls, baking sheetparchment paper, and a medium cookie scoop.

Use a hand mixer or stand mixer and a mixing bowl to combine the ingredients to make the cookie dough. Once mixed, the dough should be quite soft and light in color. If it seems too sticky, you can add a little bit of flour to the mixture.

Lastly, fold chocolate chips and mini marshmallows into the dough.

Arrange graham cracker squares on the baking sheet lined with parchment paper. Use a medium cookie scoop to add even amounts of dough on top of each graham cracker. Make sure that each ball of dough has at least one mini marshmallow.

Bake the cookies about halfway through, then remove from the oven. Top each one with a Snack Size Hershey's chocolate bar segment.

Bake the cookies the rest of the way through, or until the edges are a light golden brown. For a chewy cookie, do NOT overbake! Move the cookies to a wire rack to finish cooling.

Servings: 3 dozen cookies
Prep Time: 10 minutes
Bake Time: 10-12 minutes

Ingredients:

  • 2 cups sifted all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 12 Tablespoons unsalted butter, softened
  • ¾ cup dark brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1½ teaspoons vanilla extract
  • 1 cup milk chocolate chips
  • 1 cup mini marshmallows
  • 12 pack Snack Size Hershey's chocolate bars, broken into segments
  • Graham crackers, halved

Directions:

  1. Preheat the oven to 350º F.
  2. Line a baking sheet with a silicone baking mat or parchment paper and set aside.
  3. In a large mixing bowl, flour, baking soda, and salt and set aside. 
  4. In another mixing bowl, mix the butter until light and fluffy.
  5. Add the granulated sugar and dark brown sugar. Mix until well combined.
  6. Mix in the vanilla extract and egg. 
  7. Slowly add the dry ingredients into the wet and mix until combined. Stop to scrape the bottom and sides of the bowl as necessary.
  8. Fold chocolate chips and mini marshmallows into the dough until just combined.
  9. Lay graham cracker squares onto the baking sheet.
  10. Use a cookie scoop to add balls of dough on top of the graham crackers. Bake for 5 minutes.
  11. Remove cookies from oven and lightly press a Hershey bar segment into the top of the dough.
  12. Bake cookies for 5-7 minutes minutes until edges are golden brown. Do not over-bake.
  13. Transfer the cookies to a wire rack to cool completely.

Storage: 

  • Cookies are best eaten the same day, but can be stored in an airtight container for up to 3 days.
  • Freeze cookies for up to 3 months in an airtight container.
