There’s just something comforting about a warm, flaky pastry - especially when it’s shaped like a heart and bursting with sweet strawberry filling! If you're looking for a stress-free way to sweeten your Valentine's Day or date night, these 4-ingredient Strawberry Heart Pies are just what you need! Made with four simple ingredients and shaped with love, they’re the perfect crispy, fruity bite that you can whip up in no time at all.


Strawberry Heart Pies

These Strawberry Heart Pies only need four ingredients and are easy and quick to make for even the most beginner baker. Here's what you'll need:

  • prepared pie crust dough - to make baking quick and easy, I recommend using the 9-inch "unroll and bake" premade refrigerated pie crust dough.
  • strawberry pie filling - again, for quick and easy baking, I use a simply can of strawberry pie filling for this recipe, but homemade could also be used.
  • egg - brushing egg on the top of the pastry dough gives it a golden and glossy crust. You can use just the white, just the yolk, or a mix of both!
  • sugar - granulated sugar or sanding sugar is sprinkled on top of the pies for extra crunch and sweetness.

Bring the pie crust to room temperature and unroll one on a floured surface. Use a 2-inch heart-shaped cookie cutter (scalloped or straight) to cut a set of dough for each pie. You should be able to get 6-7 hearts from each crust. Re-roll the dough to cut more heart pieces out until you can't cut any more.
Tip: stack the pie crusts to cut two pieces at a time!

Pour the strawberry pie filling into a blender and pulse until it reaches a smooth, pourable consistency. Stop blending early to leave some small fruit pieces for added texture.

Place half of your dough cutouts onto a baking sheet lined with parchment paper, leaving about 1 inch of space between them to allow for even baking. Carefully spoon 1 to 2 tablespoons of the blended strawberry filling into the center of each shape.

Wet your fingertip with water and drag it across the edges of the pie crusts. Place the remaining dough cutouts directly over the filling, aligning the edges with the bottom layer.

Use the tines of a fork to press firmly around the entire perimeter of each heart. Not only does this lock the filling inside, but it creates a decorative border at the same time!

Beat and egg and water together until it's frothy, then brush the tops of the pies the mixture. When baked, this will give the crust a golden, glossy finish.

Poke two "vents" with the tip of a knife into the top of the dough in the center to create a "v" or small heart. This not only looks cute after baking, but will help the air to release steam and prevent the pies from "ballooning" and bursting open in the oven. 

Last, but not least, sprinkle sugar generously over the pies.

Bake the pies on the center rack of a preheated oven. Be sure to keep a close eye on the crust! It should have a beautiful golden-brown finish and a slightly crisp texture. After baking, resist the urge to move them! Let the pies rest on the baking sheet for at least 5 minutes to allow the strawberry filling to set. Otherwise, it can run out when you take your first bite, which can cause burns.

Once cooled, the pies are ready to be enjoyed! They can be stored in an airtight container at room temperature for up to three days, or you can reheat them in the oven for a minute to bring back that fresh-baked crunch.

Cook Time: 15 minutes

Ingredients:

  • 1 box 9-inch prepared refrigerator pie crust
  • 1 cup strawberry pie filling
  • 1 egg
  • granulated sugar or sanding sugar, for sprinkling

Directions:

  1. Preheat oven to 425°F
  2. Line a baking sheet with parchment paper and set aside.
  3. Add pie filling to a blender and puree and set aside.
  4. Roll out pie crust and use a 2 inch heart cookie cutter to cut out 20 pieces of dough.

    e-roll the dough scraps to cut more pieces.
  5. Arrange pieces of heart-shaped dough on the prepared baking sheet, about 1 inch apart. 
  6. Spoon 1-2 Tablespoons of strawberry pie filling in the center of each heart piece.
  7. Wet your fingertip with water and drag it across the edges of the pie crusts.
  8. Lay another heart piece on top, matching up the edges.
  9. Use a fork to press all the way around the edges to seal the pies. 
  10. Whisk one egg with a teaspoon of water until it’s frothy.
  11. Brush the egg mixture over the top of each pie.
  12. Sprinkle sugar generously over the top of the pies.
  13. Use a sharp knife to cut two slits in the center of each pie in a "v" to release steam and prevent the pies from "ballooning" and bursting open in the oven.
  14. Bake for 15 minutes or until golden brown.
  15. Let the pies rest on the baking sheet for 5 minutes, then move to a wire rack.

Tips: 

  • Store cooled Strawberry Heart Pies in an airtight container in the refrigerator for up to 3 days, or frozen for up to one month.
  • Substitutions:
    • Change the filling out for any flavor, like apple, blueberry, or cherry!
    • Use homemade pie dough, puff pastry, crescent roll, or biscuit dough instead.
