These Apple Crumble Muffins are filled with fresh chopped apples and topped with a crumbly, sugary cinnamon topping that's perfect for fall!

When it comes to fall flavors, pumpkin spice usually gets all of the attention. Apples are really quite underrated and are actually my favorite when comparing the two. These fluffy Apple Crumble Muffins are stuffed with bits of chopped apples, and topped with a delicious cinnamon sugar crumble that stay fresh for days and are even freezer friendly. This is a simple fall treat that's great for breakfast, snacking, and is always a fun dessert to take to parties!

To make these delicious Apple Crumble Muffins, you will need these simple ingredients:
- apples: Granny Smith, Honeycrisp, Fuji, and Pink Lady apples are best for this recipe.
- butter: make sure butter is at room temperature
- sour cream: Sour cream is used to add extra moisture to the muffins. Plain Greek yogurt can be used instead.
- milk: I recommend whole or low-fat milk, but nondairy milks will also work.
- cinnamon: apples pair perfectly with cinnamon to create a delicious flavor!
You will also need mixing bowls, muffin tin, cupcake liners, and nonstick spray.

Combine all of the muffin ingredients in a mixing bowl according to recipe directions. Next, add chopped apples and fold them in gently until evenly distributed. The batter will be thick!



Once the cupcakes are done, allow them to cool for 5 minutes in the muffin tin, then transfer to a wire rack to continue cooling.

In a separate mixing bowl, combine the ingredients for the crumble topping using a fork. Keep the mixture as large crumbles, and be careful to not over-mix!

Spoon the batter into each liner, filling each one all the way to the top. Spoon the crumb topping on each, gently pressing it down so it sticks. Bake according to recipe directions.


Apple Crumble Muffins
Servings: 18 muffins

Cook Time: 20 minutes
Muffin Ingredients:
- ½ cup light brown sugar, packed
- ¼ cup granulated sugar
- ½ cup unsalted butter, softened
- ¼ cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 Tablespoon ground cinnamon
- ¼ teaspoon nutmeg
- 1 ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup milk
- 2-3 Granny Smith apples
Crumb Topping Ingredients:
- ¾ cup all purpose flour
- ¼ cup brown sugar
- 2 Tablespoon granulated sugar
- 1 teaspoon cinnamon
- 4 Tablespoon unsalted butter, melted
Directions:
- Preheat oven to 400º F.
- Line a muffin tin with paper liners or spray with nonstick spray. Set aside.
- Peel apples and chop into small pieces. To keep from browning, drizzle with lemon or lime juice.
- In a large mixing bowl, beat butter and sugars together until well combined.
- Add sour cream, eggs, and vanilla extract. Mix until just combined.
- In a medium mixing bowl, whisk together flour, cinnamon, nutmeg, baking powder, and salt.
- Fold the dry ingredients into the wet.
- Just before everything is incorporated, add the milk, and continue to fold the ingredients together until the dough forms.
- Fold in chopped apples.
- In a small mixing bowl, use a fork to combine the flour, sugars, cinnamon, and melted butter to create the crumb topping.
- Add the batter to the cupcake liners, filling about 2/3 full. Then, generously sprinkle with the crumb topping.
- Bake muffins for 20 minutes.
- Transfer muffins to a wire rack to cool completely before serving.
Tips:
- Storage: store room-temperature muffins in an airtight container for up to 3 days.
- Freeze: wrap muffins tightly in aluminum foil or store in freezer bags. Freeze for up to 3 months.
- Variations & Substitutions:
- Instead of sour cream, you can use low-fat sour cream, Greek yogurt, or unsweetened apple sauce.
- Add 1/2 cup chopped pecans or walnuts to the batter when stirring in the apples.
