There's just something special about Circus Animal Cookies. I don't know if it's because they are simply delicious or the pink and white colors with the addition of sprinkles, or the combination of it all. Either way, all I know is that they never last long at my house! If you like these cookies as much as I do, you're going to love this Circus Animal Cookie Truffles recipe! Using only 3 ingredients, these no-bake treats are a simple and sweet treat that would be a fun addition to a Barbie-themed party or baby shower!

These Circus Animal Cookie Truffles only require 3 simple ingredients: Circus Animal Cookies, cream cheese, and pink and/or white melting wafers. Of course, don't forget rainbow sprinkles to top them off! This recipe is so easy to make that even the kids can help!!

Circus Animal Cookie Truffles

Crush the cookies into a fine crumb. You can do this by putting them into a sealed plastic bag and crushing them with your hands or a rolling pin, or you can put the cookies into a food processor and pulse them to crumbs.

In a medium mixing bowl, beat the cream cheese using a hand mixer or stand mixer until smooth. Fold the cookie crumbs into the cream cheese, and then mix on medium-high speed until you get a cookie dough consistency.

Now it's time to form the truffles! Roll the cookie mixture into 1" balls and place on a baking sheet lined with parchment paper. The truffles will be soft, so I recommend placing them into the refrigerator for at least 30 minutes (or in the freezer for about 15 minutes) to allow them to firm up.

This chilling step is VERY important! Not only will it help the truffles to hold their shape, but the dough is less likely to crumble apart and fall into the melting wafers when dipping, which will make the coating clumpy.

Melt light pink candy melts in the microwave or a double boiler until smooth. Place the cookie truffles, one at a time, onto a fork and dip it into the melted wafers until completely coated. Place the ball back onto the baking sheet. Repeat for HALF of the cookie truffles.

Dip the second half of the cookie truffles into white melted candy melts. Fill two piping bags with light pink and bright pink candy melts.

Immediately top the pink cookie truffles with rainbow sprinkles before the coating hardens. 

Snip the ends of the piping bags, and drizzle the pink candy melts over the white cookie truffles.

Let the Circus Animal Cookie Truffles coating set completely before serving (about 10 minutes). To make the process quicker, just pop them into the refrigerator.

Ingredients:


Directions:

  1. Crush the Circus Animal Cookies (by hand, with a rolling pin, or by food processor) into fine crumbs.
  2. In a large mixing bowl (or food processor), mix cookie crumbs and cream cheese together until well combined.
  3. Roll the cookie mixture into 1 inch balls and place on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the refrigerator for 20 minutes to allow the cookie truffles to set.
  5. Melt the white and pink candy melts in separate, microwave-safe bowls in 30-second intervals. Stir well after each interval until completely melted and smooth.
  6. Dip half of the chilled truffles, one by one, into the melted pink candy melts using a fork or a toothpick. Repeat the dipping process for the other half of the truffles into the white candy melts.
  7. Drip off excess candy melt, and place the truffles back onto the baking sheet.
  8. Decorate the pink truffles immediately with rainbow sprinkles.
  9. Fill two piping bags with melted pink and bright pink candy melts. Snip the tips of the bags and drizzling over the top of the white truffles. 
  10. Allow the candy coating to fully set at room temperature or in the refrigerator before enjoying.

Storage: 

  • Refrigerate truffles in an airtight container, lined with a paper towel, for up to one week.
    If truffles are left at room temperature the dough can expand, making the coating crack.
  • Freeze: Once the coating has set, truffles can be frozen in a large zipped-top freezer bag for up to 6 weeks. Thaw them overnight in the refrigerator before eating.
