St. Patrick's Day Mint Oreo Truffles

I love an easy recipe, and these Mint Oreo Truffles are fun, no-bake treat! In fact, it's so easy that the kids can help, and they are sure to be a hit for St. Patrick's Day! Not only are the truffles delicious, but the addition of festive sprinkles make them such a cute holiday goodie to share with friends. There are lots of ways to change this easy recipe up for any holiday or occasion, and I'm so excited to show you how!

As the title states, this easy recipe only needs 3 ingredients! The first and most important ingredient are the mint Oreo cookies. Mint is a popular flavor for St. Patrick's Day, but you can substitute with other Oreo flavors if you'd rather. You will also need some white and green candy melts and festive St. Patrick's Day sprinkles.

Crush the cookies, cream and all, into a fine crumb. You can do this by putting them into a sealed plastic bag and crushing them with your hands or a rolling pin, or you can put the cookies into a food processor and pulse them to crumbs.

Once crushed, keep the cookies in the food processor or add the crumbs to a large mixing bowl. Add in the softened cream cheese and mix together until you get a thick, paste-like consistency.

Now it's time to form the truffles! Roll the Oreo mixture into 1" balls and place on a baking sheet lined with parchment paper. The truffles will be soft, so I recommend placing them into the refrigerator for at least 30 minutes, or in the freezer for about 15 minutes, to allow them to firm up.

Once the truffles are cooled, it's time to add the chocolate coating! You can use any kind of chocolate, or add some color by using candy melts. Dip the truffles into the melted chocolate using a fork or toothpick, and set them back onto the baking sheet. To decorate the truffles, drizzle with colored candy melts and top with festive St. Patrick's Day sprinkles!

Ingredients:


Directions:

  1. Crush the Oreo cookies (by hand, with a rolling pin, or by food processor) into fine crumbs.
  2. In a large mixing bowl (or food processor), mix Oreo crumbs and cream cheese together until well combined.
  3. Roll the Oreo mixture into 1 inch balls and place on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the refrigerator for 20 minutes to allow the Oreo balls to set.
  5. Melt the white and green candy melts in separate, microwave-safe bowls in 30-second intervals. Stir well after each interval until completely melted and smooth.
  6. Dip the chilled Oreo balls, one by one, into the melted candy melts using a fork or a toothpick.
  7. Drip off excess candy melt, and place the truffles back onto the baking sheet.
  8. Decorate the truffles by drizzling the opposite color of candy melts over the top, and immediately add St. Patrick's Day sprinkles
  9. Allow the candy coating to fully set at room temperature or in the refrigerator before enjoying.

Storage: Keep the Oreo Truffles in an airtight container for 3 days at room temperature, 3 weeks in the refrigerator, or 2 months in the freezer.
