No-Bake Monster Bites

No-Bake Monster Bites are a fun and healthier treat to share at your Halloween parties!

I am so excited to share the recipe to make these creepily-fun No-Bake Monster Bites as part of Cupcake Diaries 30 Days of Halloween series! I made these with my daughter's classroom Halloween party in mind since her school is trying to focus more on sharing healthy treats and snacks. With the flavor of a Monster Cookie and the ingredients of a homemade granola bar, these bites are a delicious and a healthier option compared to the more traditional Halloween treats. It has also been great to have some in the fridge for myself to snack on in the afternoons when the sweet tooth hits and I want something to curb the hunger until dinnertime.

Ingredients:
2 1/2 cups quick/instant oats
1 cup creamy peanut butter
1/2 cup honey
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
1/2 cup mini M&Ms
candy eyeballs

Directions:
  1. Combine the oats, peanut butter, honey and vanilla in a large mixing bowl. If dough seems dry, add a bit more honey.
  2. Stir in mini chocolate chips and mini M&Ms.
  3. Roll dough into 1-2 inch balls and place on a parchment-lined cookie sheet.
  4. Press 1-3 candy eyeballs onto each ball to turn them into monsters.
  5. Refrigerate for 30 minutes and enjoy!
  6. Store Monster Bites in a sealed container for 2 weeks (if they last that long).

You can also make these Monster Bites without the eyeballs throughout the year to snack on or for kids (or you!) to enjoy as a treat in their lunch box!
