Enchilada Lasagna is a Mexican-style take on lasagna by layering corn tortillas, taco-spiced ground turkey, black beans, and plenty of gooey melted cheese!

Enchilada Lasagna is a family favorite recipe that we make almost once a week at our house. While it's not actually "lasagna", it does resemble it! Instead of pasta and marinara sauce, this meal layers your favorite enchilada ingredients with tortillas in between just like a lasagna. Enchilada Lasagna is quick and easy to make, and ingredients can be adjusted to fit your family's tastes. I hope your family enjoys this recipe as much as we do!

To make this easy and delicious Enchilada Lasagna, you will need these simple ingredients:
- tortillas: layer small corn tortillas between layers of filling to be like lasagna noodles
- turkey: use ground turkey (or beef, chicken, or pork) to make the meaty filling.
- enchilada sauce: red enchilada sauce holds the turkey filling layer together and adds a whole lot of extra flavor.
- taco seasoning: add seasonings and spices all at once! Keep in mind that taco seasoning usually contains salt, so wait and add more at the end as needed.
- black beans: black beans add extra texture and creaminess.
- cheese: Mexican blend cheese combines Monterey Jack, Cheddar, and Asadero cheeses to help create the gooiest layers.
You will also need a skillet, 9x13 baking dish, and nonstick spray.

Cook the ground turkey and diced onion until browned and cooked through (which takes about 7–8 minutes). Add garlic to the meat and cook for 1 minute. Add black beans, diced tomatoes, enchilada sauce, taco seasoning, salt, and pepper to the pan and simmer for 5 minutes.

Cut the tortillas into quarters. Layer half of the tortilla pieces in the bottom of a 9x13 baking dish.

Spoon half the turkey mixture over the tortillas and sprinkle with cheese. Repeat the layers one more time.

Cover the dish and bake until the cheese is hot and bubbly. Let the lasagna sit for 5-10 minutes before cutting into squares and serving.


Enchilada Lasagna
Servings: 6
Prep Time: 20 minutes
Cook Time: 30 minutes
Ingredients:
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 15 oz can black beans, drained and rinsed
- 10 oz can diced tomatoes with green chilies, drained
- 10 oz can red enchilada sauce
- 3 Tablespoons taco seasoning
- 6 small corn tortillas, cut into quarters
- 2 cups shredded Mexican blend cheese
- Optional toppings: sour cream, green onions, chopped cilantro
Directions:
- Preheat oven to 375º F.
- Grease and spread 1 Tablespoon of enchilada sauce on the bottom of a 9x13-inch baking dish and set aside.
- In a large skillet, cook ground turkey and diced onion over medium heat until turkey is browned and cooked through, which should take about 7–8 minutes.
- Add garlic and cook for 1 minute.
- Add black beans, diced tomatoes, enchilada sauce, and taco seasoning to the skillet and stir to combine.
- Simmer for 5 minutes.
- Arrange half the tortilla pieces to cover the bottom of the baking dish.
- Spoon half the turkey mixture over the tortillas and sprinkle 1 cup of cheese on top.
- Repeat tortilla, meat mixture, and cheese layers one more time.
- Cover the baking dish with foil and bake for 20 minutes.
- Uncover and bake an additional 10 minutes until cheese is bubbly.
- Let baking dish sit for 5–10 minutes before serving.
- Add optional toppings, if desired.
Notes:
- Substitute ground turkey for beef, chicken, or pork.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.

PS... I didn't even realize I cooked TWO of your recipes in the past 24 hours! When the recipes come in, I bookmark them, and at the time, I didn't pay attention to where they were coming from. Only when I started to cook tonight, did I discover it was once again your idea I was following!

This is one of my favorite things to make ever. Its so easy and lasts for a while. It freezes pretty well, too. Today I'm gonna try it with whole wheat tortillas and ground turkey. Yay!
