Cinco de Mayo is one week away! I was in a Spanish-immersion program in elementary school, and we'd have a Cinco de Mayo party every year. Even though I'm not from Mexico, I try to keep that tradition going and at least make some kind of Mexican dish for dinner to celebrate.   4. Mmmm. Some of these are sort of generically Latin, instead of strictly Mexican. That's a good thing - my man is Cuban! He will be thrilled to no end if he comes home to some carnitas and rice =)
