I just love decorating for Valentine's Day! There are so many options and I can't resist making more to add to my collection. Especially ones like the project I'm going to show you today. This took me all of about 15 minutes from beginning to end. Probably less without all the picture-taking. Plus, if you were to buy all the supplies needed for this project, it would cost less than $10, and you'd have extra supplies for other projects. Can't beat that, right?

There are a few kinds of dessert recipes I try to stay away from. Not just to avoid a growing waistline, but mostly because they seem intimidating and have a reputation of not being for beginners. Toffee, candy, and fudge are at the top of my list of ones to avoid. Just the thought of thermometers and the never-ending list of things you have to have perfect scares me enough to just move on to something easier. Like opening a bag of Oreos and being done with it.

Until now. I've found a shortcut recipe that makes fudge easy enough for a beginner like me to make without a problem. No thermometers, no fancy tricks. If you like cookies 'n cream ANYTHING, this fudge is perfection. Rich and smooth, you are guaranteed to impress your friends. Especially the ones who are fudge connoisseurs. Plus, you can do what I did and make sure to tell everyone how you slaved over the stove to make it... even though it only took about 10 minutes of real work!


Ingredients:
1 cup sugar
3/4 cup butter
1 (5-oz.) can evaporated milk
2 (12-oz.) packages white chocolate chips
1 (7-oz.) jar marshmallow cream
3 cups coarsely crushed cream-filled chocolate sandwich cookies {about 25 cookies}
Pinch of salt

Directions:
  1. Line a greased 9" square pan with aluminum foil and set aside.
    {A 9" square pan will make pretty thick fudge. Use a 9x13" pan for thinner fudge}
  2. Combine first 3 ingredients in a medium saucepan. Cook over medium-high heat, stirring constantly until mixture comes to a boil. Set the timer and cook for 3 minutes, stirring constantly.
  3. Remove from heat. Add in white chocolate chips, marshmallow cream, 2 cups crushed cookies, and salt. Stir until chips are melted and everything is blended.
  4. Pour fudge into prepared pan. Sprinkle remaining 1 cup cookies over fudge, gently pressing cookies into fudge. Cover and chill until firm {about 1 to 2 hours}.
  5. Lift uncut fudge in aluminum foil from pan; remove foil, and cut fudge into squares.
    {I was able to get 25 squares from a 9" square pan}

One of my goals this year is to cook more at home and to practice baking things that don't come out of a box {though I won't turn one down!!}. That means I need some recipes to work from. Obviously, the holidays are known for being filled with delicious meals and goodies, and I'll be honest - by the time the holidays come around again, I probably won't remember which ones were my favorite or where I saw "that one recipe" that I need at the moment. So now's the time to hit up family, friends, and blogs or websites for those recipes you love!!

I created some printable recipe cards so that I can write down my favorite recipes officially and not just on scraps of paper that go flying as soon as I open my recipe book. Plus, it gives me a chance to organized and all in one place for any occasions that might come up where I need to make something impressive or just need some new ideas for dinner.

There are 4 different colors to choose from, and since everyone's recipe books and boxes are different sizes, I've made both 3x5 and 4x6. I personally love using photo albums to store my recipe cards. They fit perfectly, and the plastic covering helps keep them protected when I make a huge mess!
